Dice 1 lb of pumpkin (or winter squash) in bite sized cubes.
Add 2 tablespoons of oil to a pan and 2 tablespoons of N&Ns Curry (as desired), when oil is hot. Stir for a minute or two.
Add boiled (or canned) chickpeas and diced pumpkin to the pan and stir to coat.
Let simmer, adding water, if necessary, until pumpkin is cooked (or at least 5 mins, if without pumpkin).
Remove from heat to use an immersion blender to blend half of the pan contents.
Serve with N&Ns Spicy Cilantro Pumpkin Quinoa (or Rice).
