Peel and slice ripe plantain.
Add a tablespoon or 2 of N&Ns Jerk (enough to coat and as desired) per plantain and stir to coat (adding more as desired). Drizzle with olive oil, if you desire.
Cook on stovetop, in a pan OR in an oven at 350F uncovered, stirring occasionally.
Jerk Sweet Potatoes
Dice 3 regular sized sweet potatoes in bite sized cubes.
Add a tablespoon or 2 of N&Ns Jerk (enough to coat and as desired) and stir to coat (adding more as desired).
Cook on stovetop, in a pan or pot, adding a tablespoon of water (or oil) as the liquid evaporates and sweet potatoes stick to the pan OR in an oven at 350F uncovered, stirring occasionally.
Remove from heat/oven when tender.
